Kabuli pulao Recipe in English: Ingredients: -Oil ½ cup -Onions 1 medium sliced -Mutton 500 gm -Garlic paste 2 tbsp -Water 4-5 cup -Salt 2 & ½ tsp or to taste -Sugar 2-3 tbs -Mutton stock -Green cardamom powder ½ tsp -Whole spice powder ½ tsp -Oil 3 tbs -Onion -Boiled mutton -Oil 2 tsp -Carrots julienne 1 cup -Sugar 2 tsp -Black raisins ¼ cup Assembling: -Parboiled rice (with 1 tsp salt) 600 gms -Mutton stock -Green cardamom powder 1 tsp -Whole spice powder ½ tsp -Mutton -Carrots & raisins Directions: -In pot,add oil and onion (sliced),fry until light brown. -Add mutton and saute little. -Add garlice paste and fry until meat changes color. -Now add water and salt,cook until water is reduced to half and meat is tender. -Separate meat from stock and set aside. -Cook stock until it is reduced to 1-1/2 cup,strain the stock and set aside. -Take separate fry pan,add sugar and caramelize on low flame,add mutton stock and mix it. -Add whole spice powder,green cardamon powder,mix well and set aside. -In a wok,add oil and onion,fry until light brown. -Add boiled mutton meat and fry for 3-4 minutes,set aside. -In separate fry pan,add oil and carrort julienne,mix it. -Add sugar and saute until sugar melts. -Add black raisins,mix and set aside. For assembling: -In pot, add parboiled rice, spread them and drizzle mutton stock. -Add green cardamom powder, whole spice powder and fried mutton. -Lastly topped with carrot and raisins mixture. -Covered the pot with thick cloth and lid. -Simmer on low flame for 10-15 minutes. -Garnish with carrot, raisins mixture and blanch almonds. This Kabuli Pulao is the recipe you've all been waiting for. The full ingredient list and recipe is below: Ingredients 2-4 tbs char masala (the recipe for char masala is here: 🤍 2 teaspoons cumin seeds 1.5 lb lamb 350 grams julienned carrots 250 grams of raisins 1/4 C sesame oil 2 sliced onions 4 chopped garlic cloves salt 2 Tablespoons of sugar 3 Cups Rice Kabuli Pulao Recipe Steps 1. Rinse your rice. You want to make sure the water runs clear. This cloud water is the starch you that don't want. Makes for sticky rice. (Good for other dishes, not this one) Let the rice soak. 2. Next, we are going to prepare the lamb. Break out your instapot, pressure cooker, or regular pot. Add your sesame oil and heat. Add your onions. Add your roughly cut garlic. Cook for 30 seconds and then add cumin. 3. Next we will add our lamb. Then add tablespoon of salt. Finally, add 3 Cups of water. I cook in my instapot for 25 minutes on high pressure. If you cook in a regular pot it will probably take about an hour. You want the meat to be fork tender. 4. While your meat is cooking, next cook your carrots and raisins. Add to pan some vegetable oil. Then, add your shredded carrots. This will not take long, cook until soft. Place on your foil. 5. Next, your raisins. I soak mine in hot water for about 5 minutes. Then, you will drain and add to the same pan you cooked the carrots in. This will go quick. Only cook for about 30 seconds. Then add them to the foil with your carrots and wrap into your foil packet to add to rice later. 6. Boil a large pot of salted water. Take your rice that you have rinsed and soaked and add to the boiling water. This is a step you have to watch. I can't give you an exact amount of time to cook the rice. But, you are only partially cooking your rice. If you fully cook it you will have mushy pulao. On average 4 minutes should get you there. If you can break the rice in your finger you are done. Then, drain your rice. 7. Next, we are going to make our sugar solution to add a caramel color to our rice. In a pan add quarter cup of vegetable oil. Add your sugar. Let the sugar darken. Add 1/2 Cup of water, set aside. 8. Take your meat out of the broth when done cooking. Now it is time to assemble everything. Take a big pot and add half of your rice to the bottom. Then, add your lamb. Then add last of the rice. After that, use a few scoops of the lamb broth, add the sugar mixture, and char masala. 9. Poke some holes in the rice with the handle of a spoon. This will allow steam to release better. Take your packet of raisins and carrots and place in pan on top of your rice. I cover mine with more foil then put lid on rice. 10. Scrumptious Afghani Pulao (Kabuli Pulao) Recipe. A perfect Iftar recipe to try this Ramadan. Afghani Pulao Recipe in English: Ingredients 700g K&Ns Boti Cut 3 Cup basmati rice 2 Onion chopped ½ Tsp Cardamom powder ½ tsp Cumin seeds ½ Tsp Clove 2 Black Cardamom 2 Cinnamon stick small 5 Green Cardamom 1 Tsp Cumin Powder 1 Tsp Black Pepper powder Salt as needed 1 TBSP garlic chopped 2 K&N’s Chicken STOK (cubes) 1 cup carrot 1/4 cup Raisins 1/4 cup Sugar 100g Almond 1 Cup Yogurt ½ cup Oil Direction for Afghani Pulao: 1- Heat 3 tbsp Oil and add carrot, 3 tbsp sugar, raisins, almond and fry for 3-4 minutes. Now take out in a bowl and set aside. 2- Take 3 tbsp oil in a pan add onion, ginger garlic paste, whole spices, green chilli and fry it till got brown. 3- Now add K&N’s Boti Cut and fry it for 5 to 7 minutes 4- Now add salt, cumin, coriander powder, cumin powder, sugar, yogurt and mix it well. 5- Now take out chicken and set aside. 6- Now add 3 cups of water, K&N’s Chicken STOK (Cube) and cook it for a while. 7- Now add rice and cook it for 2-3 minutes. now add cooked chicken and steam for 10-15 minutes. 8- Now add fried carrots,almonds, raisins and steam for more 2 minutes. 9-Remove rice from the pan and transfer to serving bowl/dish and top the rice with the carrots and raisins. JODHPURI KABULI Ingredients 2 medium potatoes, unpeeled and sliced into roundels 15-20 medium cauliflower florets 1 medium carrot, cut into thin roundels 2 medium onions, cut into thin roundels 2-3 white bread slices, cut into 1 inch cubes 3 cups cooked biryani rice 1 tbsp oil + for deep frying 2 medium onions, roughly chopped 8-10 garlic cloves 3-4 green chillies Salt to taste 2 tbsps ghee + for drizzling 1½ tsps cumin seeds 1½ cups fresh tomato puree ½ tsp turmeric powder 1 tsp red chilli powder 1½ tsps coriander powder ½ tsp cumin powder ½ tsp garam masala powder + for sprinkling ¾ cup yogurt 6-8 cashew nuts, halved and deep fried 5-6 fried almonds 2 tsps fried raisins 1½ tsps sugar 2 tbsps chopped fresh coriander leaves + for sprinkling + for garnish A large pinch of saffron, soaked in 1 tbsp warm milk Method 1. Heat sufficient oil in a kadai, add potato and deep-fry till golden brown and crisp. Drain and transfer on an absorbent paper. Similarly, deep fry the cauliflower florets, carrots, onion roundels and bread slices individually till golden brown and crisp. Drain on the same absorbent paper. 2. To make the masala paste, put the chopped onion, ginger, garlic cloves, green chillies, ¼ water and salt in a grinder jar. And grind to a fine paste. 3. Heat ghee and 1 tbsp oil in a deep pan. Add cumin seeds and let them change colour. Add the ground paste and sauté for 4-5 minutes on medium heat or till golden brown. 4. Add the tomato puree along with some salt and mix well. Cover and cook till the fat separates. 5. Add turmeric powder, red chilli powder, coriander powder, cumin powder and garam masala powder and mix well. Sauté for 1-2 minutes. 6. Reduce the heat to low, add whisked yogurt, mix and cook till the fat separates. 7. Add ¾ of the fried cashew nuts, ¾ of the fried almonds, ¾ of the fried raisins and sugar and mix. 8. Reserve some of the fried bread slices and add the rest into the pan along with the fried vegetables. Mix and sauté for 1-2 minutes. 9. Add ¾ cup water and mix well. Add coriander leaves and mix till well combined. Reserve half of this mixture into a bowl. 10. Add 1½ cups cooked biryani rice and spread it evenly. Sprinkle garam masala powder and coriander leaves. Add the reserved vegetable mixture and spread it evenly. 11. Sprinkle the remaining biryani rice and spread it evenly. Drizzle the soaked saffron milk, sprinkle salt and garam masala powder and sprinkle some coriander leaves. 12. Arrange remaining fried almonds, fried raisins, fried cashew nuts and place the reserved fried bread slices. Drizzle some ghee and cover the pan with an aluminum foil. Place the lid on and cook on low-medium heat for 6-8 minutes. Switch the heat off and allow the mixture to rest for 5-10 minutes. 13. Transfer on to a serving plate, garnish with coriander leaves and serve hot.
