A. Hung curd : 1 and 1/2 cup Keep the ordinary curd in a strainer or in a cotton cloth, water will get released automatically and hung curd will be ready. Take one kadai and add : B. Sugar : 3 tbsp C. Water : 2 tbsp Stir it for 4 minutes till it get caramelized, with medium flame. Low the flame and add : D. Full cream milk : 1/2 litre With medium flame boil the milk, after it gets little thicker. Take some milk in a separate bowl & add: E. Sugar : 3 tbsp and mix it with medium flame. Now add 2 tbsp milk powder in the other small bowl, mix well with milk and mix it in kadai & boil for 1 and 1/2 minute. Now take one bowl and add 4 tbsp hung curd. Whip it well. Now add the milk in this curd and mix well with hand whisk. Now pour this mixer in a soil handi(or any other pot). Now take a metal pot, cover it with towel, keep a food stand in the pot, keep the handi on it, and cover with towel. Now cover it and let it be steamed for 45 minutes with low flame. Keep the soil handi in normal freezer for 2 to 3 hours. Enjoy mishti doi.

南乳燒雞 - Marinate chicken with red bean curd


A quick and simple 5 ingredient recipe which you can make in advance. Ingredients - Chicken (you can use whole chicken, chicken wing or leg) - 3 to 4 piece red bean curd 南乳 - 1 tsp sugar - 1 tbsp honey (amount might vary slightly depending how sweet your honey is) - 1 to 1.5 tbsp soy sauce - optional: a dash of rose liquor 玫瑰露酒 Tips 1. Depending on quality of chicken you are marinating, quality might vary slightly 2. Taste the marinate sauce before placing your raw chicken in the sauce. The taste should be slightly sauce but carry a sweet after taste from the honey. For more salty add soy sauce, for sweeter add honey. 3. To keep the skin crispy, roast the skin side last. Cooking time might slightly vary depending on chicken used.

Making Dahi without starter - Make Curd without the Jaman - Yogurt without yogurt culture


If we don’t have the ready made jaman (yogurt culture), we still can make dahi without any starter curd. Ingredients for making yogurt without starter Boiled milk - 1 liter Green chilly - 2 Red chilly - 2 Lemon - 1 How to make Curd without the Jaman For setting the curd, take boiled milk in a vessel and place it on flame to make it lukewarm (make sure you heat the milk a little that it can be touched with hands easily). When the milk turns little warm, turn off the flame. We can use lemon, green chilly or red chilly powder for making the starter curd to be used for setting the curd at home. First method for making the starter curd (jaman): For preparing the starter curd with first method, drop 2 green chilies with stalk in one milk bowl( Make sure you drench the chilies well in the milk along with the stalk as only then the starter curd will set). Second method for making the starter curd (jaman): For setting the starter curd with second method, take red chilies with stalk and drench them well in the another milk bowl. Also, make sure the the stalks are nicely drenched in the milk. Third method for making the starter curd (jaman): For the third method, take one lemon, cut it into half and squeeze out the juice in a bowl. Now add almost 2 tsp lemon juice to the third milk bowl. Now cover and keep aside these milk for 10 to 12 hours at a warm place. After 12 hours, remove the lid and check the starter curds. All thee three types of jaman (yogurt culture) are ready. Now we can use them for making the curd. The taste of starter curd prepared with green chilly, red chilly or lemon is a little different then the curd prepared with these starter curd. How to make Dahi ? For setting the curd using these homemade starter curd, take boiled 1 liter milk in a vessel and place it on flame for make it lukewarm. When the milk gets lukewarm, turn off the flame and transfer the milk equally to two casseroles. After this, add 2 tsp starter curd prepared with chilli in one casserole and put the lid on. Keep it aside for 6 to 7 hours to set. Now in the second casserole, add 2 tsp of starter curd prepared with lemon and close with the lids. Let it set for 6 to 7 hours. You can also use any regular vessel as well for setting the curd but casserole is best to maintain the heat required for setting the curd. Therefore, use casserole for setting the curd quickly and easily. After 6 hours, remove the lids from the casserole and check the curd. Dense, creamy and rich curd is ready. #Shorts #mincedporktofu Another great dish to go with rice. Cut 1 packet of egg tofu from into slices or discs. Pan fry them in the pan with some oil until it forms a slight golden crust on each side. Remove and set them on a serving plate. In a pan with some oil, fry 100g minced pork with 1 slice of ginger finely diced, 1 clove of garlic and white parts of 1 stalk of scallion until fragrant and the minced pork is fully cooked. Add 1 tsp of red fermented bean curd and season with white pepper and mix well. Add a slurry starch solution of 1 tbsp corn flour to 3 tbsp water and pour into the pan to thicken the sauce. Then add the green scallion and it is done. Simply pour over the pan fried tofu and eat it with a bowl of white rice.

Fry bean curd skin sheet and glass noodle, drain and set aside Steps: 1. Heat the wok with oil 2. Add in mushroom, fermented red bean curd and fry 3. Add napa cabbage, fry until softened 4. Add carrot, fried tofu puff and fry evenly 5. Add hot water, soy sauce, sugar to season and fry evenly 6. Add bean curd skin sheet, glass noodle and crush 7. Cover with a lid, bring to boil, switch to medium heat and simmer for 3 minutes (or bean curd skin sheet softened), stir in between 8. Lift the lid, fry evenly 9. 大家好 这一期和大家分享炸南乳排骨 赶紧分享给你的酒肉朋友吧 希望大家会喜欢 感谢支持 材料 : 排骨 300克 (视频里看清洗步骤) 姜汁 适量 蒜头 1 粒 南乳 1 块 汁2 茶匙 蚝油 1 茶匙 五香粉 1/3 茶匙 胡椒粉 适量 蛋白 适量 油 适量 面粉 1 汤匙 玉米粉 1 汤匙 注意事项: 下入排骨的时候油温要够 下完排骨了再转小火 同时也要控制油温 需自己拿捏 Ingredients (Diana Aw) 1. Pork ribs 300g wash with 1tsp salt, 1/3tsp soda powder and some water for 2min. Rinse with clear water twice. Drain and set aside 2. Ginger a small piece smashed and get the juice 3. Garlic 1 clove minced Marinating ingredients 1. Red fermented bean curd 1pc sauce 2tsp 2. Oyster sauce 1tsp 3. Five spice powder 1/3tsp 4. Pepper little 5. Oil appropriate amount 6. Egg white little 7. Plain flour 1tbsp 8. Corn starch 1tbsp Method 1. Marinate the pork ribs with ginger juice and minced garlic. May add little water if too dry. 3. Add marinating ingredients 1-5 to the ribs and mix well. Then add egg white and mix well. Lastly add plain flour and corn starch and mix well. Cover and leave for 2hrs. Best overnight 4. Deep fry the ribs for 8min under medium low heat. Drain and set aside. Increase oil temp higher and fry the ribs for 1min till golden brown 5. Ingredients : 1) Fu Zhuk - Beancurd skin - 1 2) Chinese cabbage - 300g 3) Mushrooms - 5 4) Black fungus - 50g 5) Glass noodles - 50g 6) Carrot - half 7) Enoki mushroom - 1 8) Baby corn - 5 9) Ginger - 5-8g 10) Red fermented bean curd - 2 11) Vegetarian oyster sauce - 1 tablespoon 12) Sugar - 1/2 tablespoon 13) Soya sauce - 1 tablespoon Steps : 1) Wipe the beancurd skin with wet cloth to clean it 2) Put some baking soda into the black fungus and add in hot water to soak it for 10 minutes then rinse it 3) Soak the mushroom until it's soft 4) Add hot water into the glass noodles for 3-5 minutes then rinse it with cold water 5) Slice the ginger 6) Cut the baby corn into half then cut into half again 7) Peel the carrot skin and slice it into pieces 8) Chop off the bottom part of the enoki mushroom 9) Rinse all the ingredients 10) Cut off the mushroom head and slice it into half 11) Cut the Chinese cabbage and separate the bottom part (stem) from the leaves and rinse it 12) Fry the beancurd skin until it's golden brown 13) Add in oil and heat up the oil, then add in ginger and fry it 14) Then add in mushroom and black fungus, stir fry it for a while. Then add in baby corn and carrots and fry it for 1 minute 15) Add in red fermented bean curd and oyster sauce 16) Add in the stem part of Chinese cabbage and fry for 2 minutes 17) Add in the leaf part of Chinese cabbage and stir fry it 18) Next add in the fried beancurd skin and crack it while stir frying 19) Add some water and cover the lid and let it boil for 5 minutes * Optional if you want to move the dish into a claypot, it's fine to use the pan still 20) Once it's moved into claypot add some water if it's dry 21) Add in sugar and soy sauce and mix it well 22) Lastly add in glass noodles and enoki mushroom 23) Then let it simmer for 3 more minutes and it's ready to be served!
