Omschrijving: Een heerlijke springroll maken? Han laat in deze video zien hoe je gezonde verse springrolls met garnalen op tafel kan zetten! Ingrediënten (2 personen) • Rijstvellen voor springrolls • 100 gr Go-Tan Vermicelli Glass Noodles • 12 rauwe gepelde garnalen, over de lengte gehalveerd • 1 avocado, in dunne reepjes • ¼ komkommer, in dunne reepjes • 1 wortel, in dunne reepjes of 150 g peen julienne • Korianderblad • Munt, in dunne reepjes • 6 blaadjes sla • 125 gr taugé • Bieslook Hoisin dipsaus • 2 el Go-Tan woksaus Hoisin • 8 el water • 1 el pindakaas • pinda’s Sweet Chilli dipsaus • 5 el Go-Tan Sweet Chilli Sauce • 0,5 el Go-Tan Vissaus • 2 el water • Sap van ½ limoen Bereidingswijze 1. Wel de noodles volgens de gebruiksaanwijzing op de verpakking en giet af. 2. Kook de garnalen circa 1 minuut lang in heet water. 3. Meng voor de Hoisin dipsaus de woksaus , het water en de pindakaas. Snijd of crush de pinda’s klein en strooi deze over het mengsel heen. 4. Meng voor de Sweet Chilli dipsaus de chilisaus, vissaus, water en het sap van een halve limoen. 5. Snijd de avocado, komkommer, wortel en munt in dunne reepjes. 6. Week de rijstvellen in water en laat ze ongeveer 20 seconden weken tot ze slap worden. 7. Leg het rijstvel op een schone plank. Begin met de noodles, leg dan de sla, komkommer, wortel, taugé en korianderblad op het rijstvel. Vouw de onderkant van het rijstvel zo strak mogelijk over de vulling heen en vouw de zijkanten naar binnen. Vouw het rijstvel tot de helft. Houd de vulling stevig vast en leg dan de avocado, garnalen en bieslook erop en rol de springroll zo strak mogelijk op. Met de zijkantjes 8. Serveer met de dipsauzen. Prep time: 30 mins Cook time: 60 mins Number of Servings: 4-5 persons Ingredients To Make Spring Roll Sheet Maida - 1 Cup Salt - 1/2 Tsp Oil - 2 Tbsp Water To Make Filling Oil - 1 Tbsp Garlic - 1 Tsp Ginger - 1 Tsp Finely Chopped Onion - 1 No. Thinly Sliced Capsicum - 1/2 No. Carrot - 1 No. Shredded Cabbage Salt - 1/2 Tsp Pepper Vinegar - 1 Tsp Soy Sauce - 1 Tsp Chili Sauce - 1 Tsp Spring Onion Greens To make seal paste Maida - 2 Tbsp Water Method 1. Mix maida, salt, oil and water 2. Mis it to a dough 3. Knead it well for about 10 mins 4. Let it rest for about 30 mins 5. Roll it into thin wrappers 6. Mix all purpose flour and water in a bowl and keep aside. 7. Heat 2 tbsp oil in a wok. 8. When the oil is hot, add ginger and garlic and fry for a few seconds. 9. Firstly, add onion and fry till translucent. 10.Then, add cabbage, capsicum, carrots, black pepper powder, salt, red chilli sauce, soy sauce and rice vinegar. 11. Increase the heat and cook till all the water is evaporated and the filling is dry. 12. Remove the wok from heat and let the filling cool. 13. Take one spring roll sheet and keep a tbsp of filling at one corner. 14. Roll to cover the filling. 15. Fold the sides inside. 16. Apply little maida mixture on the other end and roll till you reach the end. Secure the ends nicely. 17. Make all the spring rolls in a similar way. 18. Heat oil in a pan. 19. Deep fry all the spring rolls on medium heat till they are golden brown. 20. Drain on a tissue lined plate. 21. Serve hot with chilli dipping sauce. Full Written recipe for Veg Spring Roll Prep time: 15-20 minutes Cooking time: 15-20 minutes Serves: 4-5 people Vegetable filling Ingredients: • Oil 2 tbsp • Lehsun (garlic) 2 tbsp (chopped) • Adrak (ginger) 2 tbsp (chopped) • Spring onion bulbs 2 tbsp (chopped) • Pyaaz (onions) 1/2 cup (sliced) • Gajar (carrots) 1 cup (julienned) • Shimla mirchi (capsicum) 1 cup (julienned) • Patta gobhi (cabbage) 1 cup (shredded) • Safed mirch (white pepper) a pinch • Salt to taste • Hari mirchi (green chillies) paste 2 tsp • Red chilli sauce 1 tbsp • Ketchup 2 tbsp • Soy sauce 2 tsp • Kashmiri red chilli paste 2 tsp • Vinegar 1 tsp • Sugar 1 tsp • Spring onion greens Method: • Set a wok on high heat, add oil, garlic, ginger and spring onion bulbs, stir and cook on high heat for 1-2 minutes. • Further add the remaining ingredients of the filling, stir & cook on high heat for 1-2 minutes. • Sprinkle some corn flour, about ½ tsp and mix well, finish with spring onion greens and mix well, switch off the flame and allow the mixture to cool down, keep the filling aside to be used later. Spring roll sheets Ingredients: • Maida (refined flour) 150 grams • Cornflour 150 grams • Salt a pinch • Water 475 ml Method: • Take a mixing bowl, add maida, cornflour & salt, mix well add water in batches to make a smooth & lump free batter, whisk the batter well, the quantity of water may differ, we need to make the consistency batter flowy, it should not be too thick or too thin. • To check its proper consistency, dip the spoon in the batter it should coat it while flowing. • Once the batter is in its appropriate consistency rest the batter for 12-15 minutes. • Use a non-stick pan and heat until its moderately hot, use a ladle and pour the batter on the pan, take sufficient amount of batter to make a thin spring roll sheet. • As soon as you drop the batter swirl the pan to spread evenly to make a thin sheet. Do not use any spoon to spread like a dosa. • Briefly cook the sheet for 30 – 40 seconds on medium flame, use a spatula & remove it efficiently. Cook all the sheets in same way. • If you face problem in making the sheet, for example while removing the sheet after cooking, the sheet is sticking to the pan, then water content is more in the batter and adjust by adding either cornflour or refined flour and whisk well. If the sheet is spreading evenly after swirling then your batter is thick than the required consistency. Even if the batter is perfect according to you, and still if it’s not coming out efficiently then your pan seems to be hot than the required temperature. Cook on moderately hot pan. These points are very important and do consider them while making them. • Once the sheets are cooked perfectly place them over a grill or else place them over a plate, make sure to dust the plate with cornflour to avoid from sticking. Dust cornflour between the sheets to avoid from sticking. Keep them covered with a moist cloth until you use them for making spring rolls. Making of spring roll Ingredients: • vegetable filling • Spring roll sheets • Maida (refined flour) 2 tbsp • Water 50 ml • Oil for frying Method: • in a separate small bowl, mix maida & water to make a lump free slurry. • Take the spring roll sheet, add sufficient amount of vegetable filling, start to fold the either ends inwards to seal the openings, further roll tightly to keep the fillings intact, apply little slurry on the edges and roll to seal the edges, if there are any openings or if you notice a minor crack developing on the sheets just simply apply the slurry and deep fry them. Add cabbage, carrot, capsicum, stir and cook for 2 minutes on high flame. Add salt to taste, sugar, vinegar, green chilli sauce, red chilli sauce, dark soy sauce. Stir well and cook for another 1-2 minutes. Once the vegetables are cooked well. Finish with spring onion and coriander leaves. Transfer it into a bowl and keep aside for further use. Let the vegetable leave its water. Squeeze out the excess water from the vegetable and keep aside for further use. For Dip In a bowl, add the vegetable squeezed out water, add tomato ketchup and mix well. Keep aside for further use. For Egg Roll Sheet Batter In a large bowl, add refined flour, salt to taste, sugar, water, egg white, vinegar, oil and mix well. Add a little more oil and mix well. Make sure there's no lumps. The batter should be pouring consistency. Keep aside for 10-12 minutes. Now, heat a flat non-stick pan, pour a ladleful of batter, spread it evenly and cook on slow flame. Cook until the top gets dry, turn and cook the other side. Remove on a plate and keep aside for further use. For Spring Roll Sheet Batter In a large bowl, add refined flour, salt to taste, vinegar, sugar, water and knead a tight dough. Cover it with a muslin cloth and rest it for 10 minutes. Divide the dough into equal parts and roll it, roll as thin as possible after rolling it, apply oil and dust flour and keep the rolled sheet on one top of each other and roll it. Heat a pan, cook half the string rolling sheet. Cook from both sides properly. And keep aside for future use. Or you can even steam it in a steamer, place the rolled sheet and steam for a few seconds. Keep aside for further use. For Frying Take a spring roll sheet and place a spoonful of prepared stuffing. Pull and fold over the corner tightly till it reaches half the sheet. Fold over sides like an envelope leaving no air pockets. Apply water slurry around the corners and seal the edges. Heat oil in a kadai, deep fry the spring roll until they turn golden brown. Once they turn golden brown, drain them over absorbent paper. Roughly chop the watercress and place in a large mixing bowl along with the basil and mint 2. Slice the cucumber and carrot into thin matchsticks. Thinly slice the red bell pepper, red onion, and purple cabbage. Add the veggies to the mixing bowl 3. Remove the seeds from the long green chili pepper and thinly slice. Then, slice in half the cherry tomatoes. Add these to the mixing bowl 4. Add the canned chickpeas, alfalfa sprouts and hemp hearts to the mixing bowl. Cube the avocado and add to the mixing bowl 5. Whisk together the dipping sauce ingredients 6. Pour some water onto a plate and soak a rice paper for about 10 seconds 7. To assemble the roll, place the wet rice paper onto a slightly wet cutting board. Then, place a small handful of salad onto the middle of the wrap. Fold over one side of the rice paper tucking the salad in, then fold in the sides and finish the roll 8. Set the finished rolls aside separate from one another. Chicken Spring Rolls Recipe Restaurant Style | Spring Rolls Recipe | Chicken Spring Roll | Chicken Spring Rolls Recipe | How to Make Spring Rolls | Spring Roll Recipe | Chicken Starter | Chicken Appetizer Chicken Spring Rolls Ingredients for Chicken Spring Roll: - Boneless chicken, boiled & shredded- 100 gms (after boiling) - Cabbage, shredded- 2 cups (around 100 gms) - Carrot, julienned- 1 cup (50 gms) - Green Pepper (capsicum), julienned-1 cup (50 gms) - Spring Onion Greens- 3 tbsp - Green Chillies, sliced- 2-3 - Garlic, chopped- 1 tbsp - Spring Onion whites- 2 tbsp Sauces: - Dark Soy Sauce- 1 tsp - Red Chilli Sauce- 1 tsp Other Ingredients: - Salt- 1/4 tsp - Pepper Powder- 1/4 tsp - Flour Slurry- 2 tbsp Maida (All Purpose Flour) mixed with 3 tbsp water - Spring Roll Wrappers - 10-12 - Oil- 1.5 tbsp + oil for deep frying Preparation: - Boil the chicken fillets with salt, pepper powder and water in a pan for around 14-15 mins till tender. - Take out the boiled pieces and keep it to cool. Shred the chicken fillets with a fork or with your hand. Set aside. - Shred the cabbage and julienne the carrots and green peppers (capsicum). - Peel and chop the garlic, the spring onion whites & greens and fine slice the green chillies. - Once the Spring roll stuffing is done, spread it on a plate to cool and take out the Spring Roll dough sheets to thaw. - Just before preparing the Spring Rolls, prepare the Flour paste by mixing the All Purpose Flour (maida) with water. Process: Make the Filling- - Heat oil in a wok and add the chopped garlic. Fry on high heat for 15 secs and then add the Spring Onion whites and sliced green chillies. Sauté on high heat for 30 secs. - Now add the carrots & shredded cabbage and sauté on high heat for around 2 mins. - Add the julienned green peppers (capsicum) and sauté on high heat for a minute and then add the shredded chicken. - Now add the salt, pepper powder, stir fry on high heat for another minute. - Add the red chilli sauce dark soy sauce. Give a mix and continue to stir fry for another minute. - Add the chopped spring onions at the end, stir fry for a minute - Remove onto a plate and allow it to cool. Wrapping the Spring Rolls- - You will need the thawed spring roll wraps, cooled spring roll stuffing, flour slurry and a brush to use the slurry. - Take one spring roll wrap with one corner facing you and add 2 tbsp of the stuffing around 2 inches from the corner. Arrange it in a way to form the shape of the roll. - Fold the edge on top of the filling, pushing the stuffing inside as you roll till you reach the two opposite corners. Now fold the two sides like an envelope, give one more roll and then brush the slurry on the edge to seal the roll. - Continue with the balance wraps to prepare the other spring rolls. - (Tip: Cover both the spring roll wraps and the rolled spring rolls with just wet cloth Kitchen Towels to prevent them from drying out. The wraps break during rolling if dried up and the spring rolls become too dark while frying. ) Frying the Spring Rolls- - Heat oil in a flat pan/kadai or skillet till medium hot. - Drop the spring rolls one by one (around 5-6) to not crowd the pan. - Fry on medium heat for 7-8 mins till golden in colour. - Keep turning the rolls to uniformly fry them. - Remove from oil and arrange on a plate. This is fast becoming a very popular street food now! But what is the most important ingredient for making a good Spring Roll? A good Spring Roll sheet! I am sharing with you two ways of making the Spring Roll sheet and two interesting shapes of making the Spring Rolls too. These Crisp Spring Rolls have the thinnest sheets and the greatest filling! Try them out! Recipe : Veg Spring rolls Preparation time: 20 minutes Cooking time: 20 minutes Ingredients: Sheet 1 : 2 cups Flour ½ tsp Salt Water to make batter Oil to brush Sheet 2: 3 tbsp Flour 3 tbsp Cornflour 1 ½ cup Water Filling : 1 tsp Oil 1 tsp Ginger, minced 1 tsp Garlic, minced 1tsp Green Chilies, minced ½ cup Capsicum, juliennes ¼ cup Beans ½ cup Carrots, juliennes 100 g Cabbage, shredded ½ tsp Red Chili Paste Salt to taste 2 tbsp Soya Sauce ½ tbsp White Pepper Powder ¼ cup Spring Onion Method: Sheet 1: Mix the flour, corn flour, salt and water and make a smooth runny batter. Pour enough batter so that it covers the base of the pan. Cook the crepe on one side only. Remove, dust with flour and keep aside. Repeat the same till whole batter is utilized. Sheet 2: Make a soft smooth dough of the flour and the salt using water as required. Roll out 5 lemon sized balls of the dough into chappatis. Place one sheet, brush well with oil, place the second sheet, repeat till all 5 sheets are placed one top of the other. Roll out to a large disc at least 12” in size. Heat a tawa. Place the rolled sheet on medium hot tawa and cook for 10 seconds on one side and 10 seconds on the other side. Remove and keep covered till it cools down completely. Carefully peel away all 5 sheets. Spring Roll sheets are ready. To make the filling heat the oil in a wok, add ginger, garlic, green chilies and stir till golden and fragrant. Add the vegetables and toss for 10 seconds. Add the salt, pepper and soya sauce, vinegar, red chili paste and cook stirring for 1 minute. Set aside the filling to cool. To make the spring rolls place 2-3 tbsp. of the filling in the center of each sheet. Fold in the sides and form a tight roll, sealing the edge with a little flour and water paste. Deep fry in hot oil until golden. Prepare Chicken & Spaghetti Rolls: 02:22 -In a wok,add cooking oil,green onion white part,ginger garlic paste and mix well. -Add capsicum,chicken and mix well. -Add spaghetti,salt,black pepper crushed,white pepper powder,soy sauce & chilli sauce,mix & toss well and cook for a minute. -Let it cool. -In a small bowl,add all-purpose flour,water and whish well.Flour slurry is ready. -Take roll sheet/manda patti,add prepared chicken & spaghetti filling,fold over the sides,roll up and apply all-purpose flour slurry. -Prepare the remaining rolls similarly (makes 18-20). -Can be stored in an airtight container for up to 1 month in the freezer. Deep Fry: -In wok,heat cooking oil and fry on medium flame until golden brown & crispy. Baking: -Brush oil on spring rolls & bake in preheated oven at 200C for 20-25 minutes (flip in between once after 15 minutes). Air Fry: -Brush oil on spring rolls & air fry in preheated air fry at 200C for 12-15 minutes flip in between once after 6 minutes).

Happy Summer! Fresh Summer Rolls or better known as fresh spring rolls are here! A very delightful Vietnamese appetizer or dish to make. I'll be showing you my take on it and what I like to add into my spring rolls. We will make two versions today: One with fried tofu and the other one is the classic shrimp and pork one. And yes! We will be eating these with the classic hoisin-peanut dipping sauce. Once of my favorite dipping sauce to go with spring rolls. I'll be using the fresh tofu I made from the previous recipe/video I put out since it's the perfect texture and size to be put in the spring rolls. The amazing thing about fresh spring rolls is you have the freedom to put whatever herbs, vegetables, and protein you like. Yes, you can also cook the protein however you like. You can pan sear them instead of boiling them etc etc. So have fun and happy cooking! As a Vietnamese, these 3 dipping sauces are my usual go-to for making authentic Vietnamese spring rolls at home! I’ll show you tips to wrap spring rolls too so you can brag your summer rolls to your friends and family! IMPORTANT TO KNOW: - This combi of greens is commonly used in Vietnam, it gives good balance of taste & texture. Some people also added: shredded carrots, egg strips, perilla leaves, fish mint, even otaheite apple’s young or mango young leaves (for its sourness) etc. - You can use pork belly, or a cut that has some fats. I went shopping too late so I had to use tenderloin ;) - Rice paper with more tapioca starch + thicker = easier to roll for beginners but can be chewy. The ones with more rice flour + thinner = harder to roll, but more delicious! - A roll that is packed firmly with layers of ingredients will taste better, not messy to eat, and less likely to break - Pork slices & other moisture rich ingredients should be wrapped inside the greens so they don’t touch the rice paper. If not, it may causes breakage - There are different brands of fish sauce, hoisin sauce, salted bean etc so always taste and adjust accordingly - I used Healthy Boy Salted Soya Bean Paste. Some brands added soya sauce which is not so good for the sauce - These 3 sauces aren't the only ones that can be used to dip with Gỏi cuốn. However, they are more widely used, more palatable and easier to eat for most people INGREDIENTS: 1. SPRING ROLLS 300g pork (your choice of cut) 10 whole medium prawns, peeled Prawn heads and shells Lettuce Mint Thai sweet basil Chives Beansprouts Julienned cucumber Rice vermicelli noodle A bowl of water A clean tea towel 2. HOISIN & PEANUT SAUCE 2 cloves of garlic, finely minced 1 medium shallot, finely minced 5 tbs Hoisin sauce 175 ml of stock (prepared above) 2 tbs chunky peanut butter ½ tbs sugar ½ tbs sriracha or chili sauce ½ tbs white vinegar 3. SWEET AND SOUR GARLIC FISH SAUCE 2 garlic cloves, finely minced 1 large Thai chili, finely minced 5 tbs white sugar 3 tbs lime juice 6 tbs warm water 4 tbs fish sauce 4. SALTED SOYA BEANS SAUCE 1 bowl of milk (optional) 40g sliced pig’s liver (optional) 2 garlic cloves, finely minced 1 medium shallot, finely minced 3.5 tbs salted soya beans paste 175 ml stock About 40g rock sugar, or about 3 tbs sugar 2 tbs chunky peanut butter ½ tbs sriracha/chili sauce ½ tbs white vinegar STEPS: 1. SPRING ROLLS - Soak & cook rice vermicelli according to package’s directions - Boil pork in 400 ml of water, remove and submerge in cold water once cooked - Boil peeled prawns for 1 min - Add prawn heads and shells, simmer for around 10 mins to make a stock for the sauce. - Slice pork thinly & slice prawn into halves - Place rice paper glossy side down on a large plate - Wet the towel then wipe both sides of rice paper - Break the stem of the lettuces leaves to flatten it - Make a rectangular lettuce bed at the bottom half of the rice paper, lay the herbs, cucumber, beansprouts, rice vermicelli & pork slices on top - Roll the bottom half up, fold right side in, lay chives down, then fold left side to secure. - Lay the halves of the prawns, orange side down, stuck in firmly & roll the rest - Stack the rolls up vertically to trim chives for better presentation 2. HOISIN & PEANUT SAUCE - In a sauce pan, fry garlic and shallot with some oil until fragrant - Add hoisin, stock and peanut butter. Stir well to dissolve - Add sugar, sriracha and white vinegar. Remember to taste & adjust! - Garnish individual sauce bowl with: pickled radish & carrot strips, crushed toasted peanuts, minced chili, crispy shallot 3. SWEET & SOUR GARLIC FISH SAUCE - Follow this order so the garlic and chili can float beautifully - Add garlic, chili & sugar in a bowl. Mix well - Add lime juice & water. Mix until sugar is dissolved - Add fish sauce last - Garnish individual sauce bowl with: pickled radish and carrot strips 4. SALTED SOYA BEAN SAUCE - Soak liver in milk for 30 mins to remove odor, then wash and rinse very well - Press to remove excess water - In a sauce pan, fry garlic and shallot with some oil until fragrant - Add liver, stir fry until cooked, then add salted soya bean and stock - Blend the mixture until quite smooth - Add rock sugar, peanut butter & stir until dissolved - Add sriracha & vinegar - Garnish individual sauce bowl with: pickled radish and carrot strips, crushed toasted peanuts, minced chili, crispy shallot Good luck making them, let me know which one is your favorite.
